INGREDIENTS:
- 1 whole chicken, cut into 8 to 10 pieces
- 2/3 cup vinegar
- 1/2 cup brown sugar
- 1/2 cup soy sauce
- 2 pieces bay leaf
- 1 tablespoon peppercorns, whole
- 1 1/2 tablespoons garlic, minced
- 2-3 cups water
- Salt and Pepper to taste
PROCEDURE:
- Combine all ingredients except the water in a deep casserole. Marinate for 30 minutes to 1 hour.
- Add water and mix thoroughly. Let mixture boil for 10 to 15 minutes. Remove the impurities that formĀ on the surface.
- Simmer for 30 to 45 minutes more or until chicken is tender. Season to taste with salt and pepper. serve while hot !
