Chicken Estofado Recipe

INGREDIENTS:

  • 1 whole chicken, cut into 8 to 10 pieces
  • 2/3 cup vinegar
  • 1/2 cup brown sugar
  • 1/2 cup soy sauce
  • 2 pieces bay leaf
  • 1 tablespoon peppercorns, whole
  • 1 1/2 tablespoons garlic, minced
  • 2-3 cups water
  • Salt and Pepper to taste

PROCEDURE:

  1. Combine all ingredients except the water in a deep casserole. Marinate for 30 minutes to 1 hour.
  2. Add water and mix thoroughly. Let mixture boil for 10 to 15 minutes. Remove the impurities that formĀ  on the surface.
  3. Simmer for 30 to 45 minutes more or until chicken is tender. Season to taste with salt and pepper. serve while hot !
